1 can (400ml/14 oz) coconut cream
1 cup plain Greek yogurt (full-fat or 2%)
3 tbsp honey or maple syrup (adjust to taste)
1/4 tsp cardamom powder
Pinch of saffron threads (optional, soaked in 1 tbsp warm milk)
2 tbsp chopped pistachios
2 tbsp chopped almonds
1 tbsp rose water (optional, for authentic flavor)
For Garnish:
Extra chopped pistachios and almonds
Rose petals (optional)

Step 1: Prepare the Kulfi Mixture
In a blender, combine coconut cream, Greek yogurt, honey, cardamom powder, and rose water (if using)
Blend on medium speed for 30-45 seconds until completely smooth and well combined
If using saffron, add the soaked saffron with the milk and blend for another 10 seconds
Taste and adjust sweetness if needed
Step 2: Add the Nuts
Pour the mixture into a bowl
Fold in chopped pistachios and almonds
Mix gently to distribute nuts evenly
Step 3: Freeze
Pour the mixture into kulfi molds, popsicle molds, or small paper cups
If using paper cups, insert popsicle sticks once mixture is partially frozen (after 1-2 hours)
Cover with plastic wrap or aluminum foil
Freeze for 6-8 hours or overnight until completely solid
Step 4: Serve
To unmold, run the mold under warm water for 10-15 seconds
Gently pull out the kulfi
Garnish with extra chopped nuts, rose petals, and saffron strands
Serve immediately
