Ingredients
The Protein:
6oz (170g) Boneless Skinless Chicken Breast
Marinade: 1 tsp olive oil, juice of ½ lemon, 1 tsp garlic powder, ½ tsp smoked paprika, salt & pepper
The Base:
¾ cup Cooked Quinoa — (~130g cooked)
1 cup Mixed Greens or Arugula
½ cup Cherry Tomatoes — halved
¼ cup Cucumber — diced
The Fats:
¼ Avocado — sliced
The Dressing:
1 tbsp Lemon Juice
1 tsp Dijon Mustard
1 tsp Olive Oil
Salt & Pepper — to taste

Marinate the Chicken:
Combine olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Coat the chicken breast and let marinate for at least 15 minutes (up to 4 hours).
Cook the Chicken:
Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C).
Rest for 3 minutes before slicing.
Cook the Quinoa:
Rinse ⅓ cup dry quinoa. Combine with ⅔ cup water, bring to a boil, reduce heat, cover and simmer for 15 minutes. Fluff with a fork.
Make the Dressing:
Whisk together lemon juice, Dijon mustard, olive oil, salt, and pepper.
Assemble:
Layer greens and quinoa in a bowl.
Top with sliced chicken, cherry tomatoes, cucumber, and avocado.
Drizzle with dressing and serve immediately.
