Ingredients
  • 3 Ripe Bananas (large)

  • 3 Eggs

  • 4 tablespoons Almond Butter (natural, no added sugar)

  • 1 cup Fresh Blueberries

  • 1 teaspoons Baking Powder

  • 1 teaspoons Vanilla Extract (optional)

  • 0.5 teaspoons Cinnamon (optional)

Preparation

Preheat Oven: Preheat your oven to 350°F (175°C). Line a standard 9x5 inch loaf pan with parchment paper or spray lightly with cooking spray. Lining with parchment makes lifting the loaf out effortless.


Mash the Bananas: In a large bowl, mash all 3 Ripe Bananas (large) until completely smooth. The riper and more spotted the bananas, the sweeter and more moist your loaf will be, this is your only sweetener, so don't skimp on ripeness.


Mix the Batter: Add 3 Eggs to the mashed banana and whisk until fully combined. Stir in 4 tablespoons Almond Butter (natural, no added sugar), 1 teaspoons Vanilla Extract (optional), and 0.5 teaspoons Cinnamon (optional) until smooth. Fold in 1 teaspoons Baking Powder and mix until just incorporated, do not over-mix or the loaf will be dense.


Fold in Blueberries: Gently fold in most of 1 cup Fresh Blueberries, being careful not to burst them. Reserve a small handful to scatter on top of the loaf before baking for a bakery-style finish.


Pour & Bake: Pour the batter into your prepared loaf pan and spread evenly. Scatter the reserved blueberries on top and press them in slightly. Bake at 350°F (175°C) for 40 to 45 minutes or until a toothpick inserted in the center comes out clean. If the top browns too quickly, loosely tent with foil after 30 minutes.


Cool Before Slicing: This step is non-negotiable, let the loaf cool in the pan for 30 minutes then transfer to a wire rack and cool for at least 20 more minutes before slicing. Cutting too early will cause it to crumble. It firms up beautifully as it cools.
